100 Pounds Of Lettuce

My nephew brought us 4 huge bags of lettuce. Each bag was 25 pounds. He works at a food processing plant and occasionally they give their employees some of the food items. He actually kept another 4 bags for himself. I started to say no thanks when he brought them over, but I didn’t want to seem ungrateful. I figured that we would have a lot of salad and maybe I could find some recipes. Freezing it would change it too much. Anyways, I was greatly relieved to learn that we could fry it and pickle it. That’s exactly what we did. We did make taco salad the first night. Food is expensive these days and the lettuce was a blessing. We have enjoyed the two new ways of eating lettuce very much. The pickled lettuce is with the knock wurst and the fried is on the right. Last month he gave us 30 heads of cauliflower. Do you ever get something that you didn’t know what to do with ?

Wow! That's a lot of lettuce and cauliflower. It's just me; so I don't get a lot of things to eat. Have a good weekend.

It’s funny you mention that. My dad gave a couple 25 lbs. of chicken tenders, but they were still working on the 25 pounds of chicken tenders he’d given them last month. But like you said, who wants to turn down free food?

For real Marie? I did not realize you could pickle lettuce..yes best not to waste it. No never had too much of anything.

That certainly is a lot of lettuce and glad you found new ways to use it. I never would have thought of pickling it or frying it. I'll have to keep it in mind for those times when I have a lot of lettuce and don't want to eat salad. At least with 30 heads of cauliflower you have more ways to use it and it certainly freezes well. I love cauliflower.

I have spinach from Thanksgiving from a food service worker in my brother's church. He gave them a lot. I love spinach.

Wow, I would be at my wits end with all that. I didn't know you could pickle lettuce. Sounds interesting. Does it taste like sauerkraut?

I like to cook but when I read your post my minds started thinking about what to do with that amount of veggies and I gave up. Cauliflower lasts a lot longer. And can be used grated instead of rice. But lettuce?

@Tampa_girl7 I have even had lettuce added to soup. We just think of it as always a cold food, but it is a leafy green and can be prepared like most. Sure like it better than kale.

When we fry the lettuce it shrinks like spinach leaves do. It is very tasty.

I wouldn't know what to do with all that produce in double digit pounds! Interesting to pickle it - and to fry it - never thought of that. I guess I would try to give it away - I don't think all that would even fit in our fridge .

@much2say just cooked it in butter, salt ,pepper, onion and garlic. Ate it as a side. It was very much like greens.

That is an enormous amount of lettuce, I would be totally stumped as to how to use it all without wasting it. You did a good job of finding alternate ways of keeping it good.

That's fascinating about frying lettuce. Cauliflower would be easier to deal with. You can freeze that.

Wow...100 pounds of lettuce is a lot! I love salads, but of course that's too much to save for salads as it would spoil. It's good that you were doing the pickling, and that you can enjoy it for days to come. And that's a ton of cauliflower, too. I know that can be frozen, I have done that when we grow it outside, but still, it's bulky and that's a lot to freeze.

i think i didbut can't remember what. indeed, you can freeze something but not all.
