I made the carrot graham layer cake from the momofuku milk bar (now just called "milk bar") cookbook yesterday for my ex-husband's birthday which is tomorrow. His favorite cake is carrot cake. He always acts like he doesn't care about his birthday. It is 2 days before Christmas. My mother's birthday is the day after Christmas. I know how much it bothers her when people combine the 2 into 1 present/card/whatever so I always acknowledge his birthday even now that we are divorced.
I've made this cake once before so I knew I could do it again. I did have it in the freezer for the required 12 hours. It actually was closer to 14 hours. The graham frosting set up perfectly but the liquid cheesecake filling was obviously still liquidy and wasn't so pretty after removing the acetate strips. It doesn't look perfect but it is what it is. I'm not OCD so I snapped the picture after removing it from the mold and taking off the strips. I'll smooth it out tomorrow before dropping it off. Either way I don't think my ex will care because the appearance doesn't affect the taste.
To make/assemble the cake I had to make 5 components: carrot cake, graham crust, graham frosting, liquid cheesecake, and milk crumbs. None of it was hard--it just takes time. I have a lot of that.

That’s exactly what I say: my taste buds and stomach don’t have eyes, so phooey on the “presentation”!!!
Looks incredibly fattening…I mean, delicious!
