Baking projects for the day

The fridge is overflowing with food so I definitely don't need to cook anything. I actually would love to see what my buddy @porwest would come up with after finding leftover stuffing, steamed vegetables, bechamel, stuffed pepper soup, roasted chicken, etc. in my fridge. (and yes I have plenty of his favorite--shredded cheese ) I am going to do some baking though. Now that the complicated birthday layer cake for my ex is finished I can make the stuff to bring for Christmas--Mexican Wedding Cookies (aka "walnut balls") and struffoli. I make the walnut balls every year as they are my favorite. I don't care if I am the only one who eats them. . . though I never am. The struffoli is a nod to my late father's side of the family. His aunt was named Frances though everyone called her "Dee". (no clue why) Aunt Dee made the classic Italian fried dough balls that are coated in honey and either sprinkled with powdered sugar or non-pareils. I'm going with non-pareils. I haven't had struffoli in decades. I don't even remember why I remembered it. I must have seen a recipe online. So that's what I'm up to in the kitchen today. Are you doing any holiday baking?

No baking here. I would love to make a cheesecake and some cookies. Have a wonderful Christmas Eve.

I like them both. I am better at cooking. I am not big into sweets but I do a lot of baking for others and to try to improve my skills. Years ago we had male science teachers in our end of the wing so I would bake something new every weekend and then bring it into work. Then the men quit or were moved to a different room. The women didn't want to eat baked goods all the time so I learned to drop them off in the main faculty room for others to enjoy.

I havenĀ“t baked for years, ever since I found out that my late husband was a diabetic. But noone warned us against high pressure so I cook appetizers and main dishes.

Sounds like you are going to have fun baking, No holiday baking just for me but I might open the box for corn muffins and make myself some of those,

The small amount of baking I'm doing is very much less complicated than yours but it will still get eaten at some point over Christmas.

Everything you have leftover would make fantastic alternative dishes. No, really. The roasted chicken and steamed veggies could make a fantastic soup, and the soup you have leftover could be made into a meat and rice bake. I'd assume it wouldn't even need meat added if it already has ground beef in it. The stuffing could be made into a strata of sorts.
