What's for din? December 30th, 2024

Only two more dinners left in 2024! Can you believe how fast the second half of this year has flown by? So, we ended up eating at different times today. I was feeling a bit peckish and, after some chatting with @AmbiePam, I decided to whip up a salad. We had a head of lettuce that needed to be used up before it went bad, and there were some bacon leftovers from breakfast, plus some microwaveable chicken patties. I cooked the patties, chopped them up along with the bacon and a few slices of cheese, and tossed it all together in a bowl with the lettuce, ranch dressing, and parmesan. It turned out to be a pretty tasty salad! Chris went for a classic ham sandwich, and the kids enjoyed breakfast sandwiches. So, it turned into a fun fend-for-yourself kind of night! What did you all have on your table today?

I actually had a Boca Burger (frozen veggie burger patty). They’re just as good as I remember!!!

That salad sounds delicious. I had lemon pepper chicken. Different from the plain chicken I had last night, of course.

For my last supper of 2024 I settled for a little pizza. I am not thinking about whither to stay up until midnight or go to bed. Mind you, with the fireworks I'd be lucky to get any sleep until after midnight

Sounds like a good salad to me, and something I'd definitely do around here. We had pigs in a blanket.
