Ringegourd is one of the watery vegetables called turai in hindi and jhinge in bengali. The plantations require a lot of water. The vegetable bulges out from the plant. In bengal a dish is created called jhinge aloo posto which is made out of ringegourd potatoes and poppy seeds paste. It is eaten with rice and chapatis.
