We had a little snow

We had some dry, powdery snow, but I believe it has stopped. I am doing meal prep today since I was not home Saturday to do it. I just put a Reuben casserole in the oven, and it will make some nice meals for us. There is rice cooked that needs to be portioned up and put in the freezer to make things like fried rice. Probably there will be an egg bake as well, for our breakfasts. Eggs are pricey, but when mixed with meat and veggies, etc. they will go further. I want to get my new heated mattress pad put on the bed today as well. I did not sleep well last night, but that is okay. I am moving right along today and if I get too tired I will crash, happily. Good Monday to all of you. I am glad they cancelled the inservice for us today.

We were supposed to have snow yesterday, but it ended up being 15 minutes of sleet.

I never thought to freeze rice. I usually just try to use it up on recipes the following days. I’ve never heard of a heated mattress pad gosh that must feel so nice We didn’t get much snow but since so much was predicted they canceled school ahead of time for today.

Actually freezing or at least chilling carbs is better for your blood sugar, and since I am diabetic that is important. The other thing is, rice and pasta grow bacteria really fast when they are leftover, so I like to freeze them to prevent that. We were "turned on" to heated mattress pads over twenty years ago by a nurse we both worked with. I do not like electric blankets over me, but putting the heated pad under is very nice. I actually first heard of them as bunk warmers for semi trucks. My first husband was a trucker.

@GardenGerty oh that would be great for truck drivers if they have to shut their engines off that would help keep them warm. I had heard that about rice when leftover but never about pasta. Anything not eaten here within a week I toss but I’m guessing you are more careful then that.

Just a little snow? It just keeps on coming here... get the walkway cleared and more covers it up. At least it was a bit sunny today, and is supposed to be tomorrow, too... nothing predicted to fall out of the sky at us, anyway.

When the temperatures stay cold, though, it does not melt away either. Here I am a week later and we will supposedly have 40's and 50's all week.

@GardenGerty It was sunny yesterday (26th) and some melting occurred. It's sunny this morning and supposed to get up to a whopping 2°C/36°F so I guess there'll be more melting today, but the forecast for tomorrow shows 60% chance of snow...

It’s brutally cold here, which is why I’m staying home. It was painful to just run out to the garage and start the car, then feed the critters.

Have a nice Monday there. It's 11 PM here and I am kn bed watching Trump's ceremony on news channels. My Monday was a bit hectic. I will just sleep in some time.
