What's for dinner? January 23

What's going on the dinner table tonight? Share with us! I am sick of leftovers so I am making something new tonight to have variety and also to use up some stuff in the fridge: tomatillo-sauced enchiladas with spinach and mushrooms. The recipe comes from Rick Bayless' Mexican Everyday cookbook. I've made them before and they are very tasty. This time I am going to include some of the suggested shredded chicken just to add some protein to the meal. (and use up the chicken) To go with them I will make his Gulf-coast style white rice which also is included in the cookbook. That one is an absolute favorite. So it will be a good and balanced meal with plenty of vegetables because I am a grownup and eat like one. That's what is happening here. What are YOU having? I want to know!

@porwest I would never eat chicken nuggets. I'm fine with tater tots every now and again.

@NJChicaa They were actually pretty good. I wouldn't say delicious. But good enough. I don't mind chicken nuggets every once in a while.
