I made a low carb Reuben casserole tonight. It was delicious, but I the recipe called for corned beef, and the grocery store deli told me they didn't sell it any longer?? I ended up getting pastrami. It tasted pretty close a real Reuben. Have you made any good low carb casseroles? Do you like Reubens?

I have some pizza leftovres in the fridge..not sure if or when it will be eaten though.

They have a lot of them. I made a low carb pizza casserole one time, but I think I will also make a low carb philly steak casserole, after I finish this one that is.

I made French onion pasta and glazed carrots. My son was talking to me so I would up tossing the brown sugar on the pasta and stirring it in before realizing the mistake I made. I was so upset, I knew I should have told him I couldn’t concentrate but he is such an irritable teen and when he’s willing to start a conversation with me I want to listen.

@snowy22315 he isn’t sure what he wants to do. He is in 11th so luckily he had time to think about it. I know he does not want to go to college. His band teacher things he can get him a scholarship for a music school but my sons not interested.

@shaggin Why wouldn't he be interested? If he stays there, there are probably very few opportunities. I would encourage him to at least look into the music school. Maybe he will get excited about it. Growing and changing are part of life.

They are so good. Reubens are good, the thing I don't like about them though is they are over the top on salt content, and in one with bread the calories are quite high.

I made Reuben casserole last week. There is one lonely piece left, because Bob did not know I had left it for him. We had a Subway sandwich called The Outlaw. It tasted pretty good. Bob did not know exactly what it had on it, but it was one of their $10 footlongs.

Low-carb Reuben casserole sounds fire ?? Pastrami is a solid save, though—props for improvising! I haven't tried making a low-carb casserole yet, but now I'm tempted. Reubens are elite, so this might be my next kitchen experiment!
