Making my own "sausage" patties

I don't eat things like hot dogs, sausage, keilbasa, etc. because I don't know what exactly is inside them. My mother traumatized me as a child by telling me that hot dogs were made from, well, I won't say what she said but basically all of the garbage and gross parts of an animal. Yeah that put me off of them for life. I still ate sausage but I distinctly remember one day slicing up sausage for a big crock pot of sausage and peppers and thinking "yup--I'm not eating this any longer". So no mystery meat for me though somehow my mind does make an exception for pepperoni on pizza and yes I know that makes absolutely ZERO sense. I came across this recipe for homemade turkey "sausage" patties on the Skinnytaste website and was immediately interested. I like the flavor of sausage. I just don't like not knowing what is in it. So this fits the bill. I am in the process of making a batch and then I'll have it ready for this week's breakfasts. She suggests pairing it with scrambled eggs that contain cottage cheese for a high-protein breakfast. I love that idea! I think this will be going into my regular meal-prep rotation.

We grind up venison each fall for burger and last year made some venison sausage. I like knowing what is and isn't in our meat. Plus, venison is very lean and even needs a little beef fat added in.

@NJChicaa We didn't bother with casings, just made patties for the freezer.

I have long wanted the meat grinder attachment for my KitchenAid. I'd do sausage if I could make it myself.

I got that same story about hot dogs when I was a kid from a 5th grade teacher, and it affected me...until I grew up. That's not a diss on you, of course. But it is a true statement in my own case. I grew up. At the same time, things like sausage and kielbasa and whatnot are all delicious and to me, worth eating. So, if making your own is the answer, I am all for it.

Yes I like the flavor but I don't want to eat mystery meat. I deserve better than that.

@NJChicaa Food is food. I grant there are some things we don't necessarily consider food. But many of them are just our mind more than anything.

I’m not a big sausage eater, but I do like sausage patties. And since I was told the same things about the ingredients of hot dogs I only eat them when I’m at someone’s get together, and that’s what is on the menu (usually at a barbecue.

We joke that sausages are made from the sweepings of the butchers' shops floors. But I love sausages and patties.
