Oh Boy, I Completely Forgot About That

And how in the world did I, I wonder? I walked out into the kitchen for an early snack. I don't eat breakfast, but I just felt hungry. I was looking around and saw we had some soup left over, a piece of braised pork, some corn, some mac and cheese, baked beans and other stuff. Then I saw it. In the back of the fridge on the bottom shelf. An old large butter tub that I knew was not actually butter. "What is that?" I wondered. I yanked it out and opened it up, and remembered as a matter of fact we did have meatloaf and somehow it completely slipped my mind. What a glorious find! Got it in the microwave as we speak and put some of the mac and cheese on my plate. This is going to be good eats!

Man, let me tell you, sometimes I LOVE a meatloaf sandwich on toasted bread with some Miracle Whip and cheese. That's good eats, and doesn't need to be warmed up.

@porwest I pour some Sweet Baby Ray's bbq sauce on it between white loaf bread with a good amount of crushed red peppers. Yum!

I've just never been a breakfast eater. I usually have lunch around 10ish and usually at least before noon.

@lovebuglena No. Nothing like that. lol. Usually I tend to be about 5-7 days depending on what it is, max. But generally, things don't ever take that long to use up. Most leftovers get used up in about 3 or so days.

I can totally relate to that! I've had those moments too where I've forgotten about something hidden in the back of the fridge. It's always exciting to find something new to eat. I love how you were able to turn those leftovers into a satisfying meal. I'm inspired to do the same!

That definitely was a lucky find and glad you enjoyed it. Many times I forget what's in those containers and wind up throwing out something really good.
