What's for dinner? January 30

What's going on the dinner table tonight? Do tell! I am finally getting around to making the dinner that I didn't make last night--boneless skinless chicken thighs with Penzey's Outrage rub, stuffing out of a box, and garlic mashed cauliflower. Nothing fancy but it will be good and man am I hungry tonight! That's what is happening here. What are YOU having? I want to know!

We'll be heading back from a bit of a road trip so I have no idea what we'll have tonight but no doubt it will be something.
