When is the last time you had meatloaf...the food!

We just meatloaf the other night...I work nights so I mixed it up with the help of my boy and then set it in the stove to be baked/cooked at the appropriate time so that dinner could be ready just after I got home..how do you like it..personally no tomato sauce on top for us.

I ate meatloaf about a week ago. I put a layer of cheese tomato sauce and peppers and onions in the middle of the meatloaf when I shape it. Then I top it with sour cream. My husband calls it taco meatloaf.

I just made meatloaf the other night. It's 1 of the family favorites! I always have to make 2 big pans of it and still have to tell the kids to leave it alone to be able to have leftovers!
I don't make mine with ketchup though, instead I use spaghetti sauce. And by doing so, I can make a variety of it. They have so many different sauces now and sometimes I love to make it with the garden combination sauce. Has big chunks of veggies in it and the kids love it too!
I make mine with the sauce, a couple eggs, italian bread crumbs (or sometimes just rip up bread) and onions.
I also top it off with extra onion rings and the leftover spaghetti sauce. The kids love the top!
After reading some of the above posts, I might try some new things, like the rice in it, or the cheese ideas... never thought to put cheese on my meatloaf! LOL

Ha, I just made meatloaf last night. It was so yummy. I use 1-2 lbs of meat, Italian breadcrumbs, diced onion, egg, 1/2 can tomato sauce and seasonings. Then I make a sauce for the top with the other 1/2 can of tomato sauce, mustard and brown sugar and pour it over the last 15 minutes of baking time.

It isn't one of our favorite foods. I make it maybe one time every 5 years. I use bar b que sause, as we don't like ketchup or tomato sause on ours.

I enjoy meatloaf but only eat it when it is homecooked and rarely order it in resaraunts. The last time I had meatloaf was about 2 weeks ago at my motherinlaw's house. She makes it exactly the way I like it. She adds the standard onions and spices but she also uses minimal breadcrumbs. This gives the meatloaf less of a spongy texture and more of a meaty feel.

Our family loves meatloaf, and I usually use 1-2 lbs of ground beef (I make a big one so we have leftovers for sandwhiches), finely chopped onion, italian bread crumbs, 2 eggs, parmesan cheese, and about a 1/2 a cup of salsa and 1/2 cup of cheddar cheese....I then bake it and will put ketchup on only half of it, because 1/2 of us like it that way, and the other half dont! It's wonderful! I serve it with either scalloped potatoes, or mashed potatoes and a vegetable!

We think so alike in this. However my meatloaf is crumbly and moist, not really sliceable. With bread crumbs in it we don't see the need for putting it on more bread. We also do scalloped taters and often some vegetable. Thanks for responding!!

Bee's Sweet and Sour Meatloaf
INGREDIENTS
2 tablespoons butter
1 onion, finely chopped
3 tablespoons honey
2 tablespoons ketchup
1 tablespoon soy sauce
1 tablespoon hot sauce
2 pounds ground beef
Optional: 1/2 cup ketchup
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Lightly grease an 8x8 inch baking pan.
Melt the butter in a skillet over medium heat. Stir in the onion, honey, ketchup, soy sauce, and hot sauce. Cook and stir 5 minutes, until onion is tender.
In a bowl, mix the onion mixture with the ground beef. Transfer to the prepared baking dish. Top with ketchup if desired.
Bake 1 hour in the preheated oven, or to an internal temperature of 165 degrees F (70 degrees C).

Instead of meatloaf, I bake meatballs. They cook much faster. I use ketchup,garlic salt, chili powder and pepper, sometimes onions. You can put the meatballs on top of large size biscuits too for a variation, plus I put cheese melted on top of mine.

I will use this next time we do spaghetti, however we like meatloaf for the four of us with side dishes on a plate. no tomato products in my meatloaf, those can be added on the plate, as well as if they want cheese or some such.

With lots and lots of ketchup. LOL And I like rice in it also. :)
But I haven't eaten meatloaf in a long time. I do not eat much red meat.
Have you ever made it with ground turkey before? It is really good and soaks up the tomato flavor better than ground beef.

We don't use tomato with ours. Rice I am thoughtful of although I use whole wheat bread crumbs in mine. White rice would change that a bit in the body. Turkey, we only eat turkey burgers since we sooo love that kind of burger. My hubby though is known to your barbq sauce on some meats for additional flavor.

I love meatloaf but i have not had it in probably over two months. My oven quit working but I have a toaster oven now. Maybe I will make it this weekend. Other than the normal ingredients, I like to add french onion soup mix. It comes out really good. My boyfriend hates ketchup so we use BBQ sauce.

Sorry about the stove. we just had to get another one too. We gots our on the county trading post site. Thanksfully since I have 2 kids to feed. The french onion soup is a great idea. We like to put it with sliced potatoes and make oniony potatoes as a side dish. In the meatloaf would be great if I didn't load it up with garlic..lol Thanks for responding!!

My brother loves my meat loaf,when he comes to visit,I have to cook two huge ones so he can one to take home. I used italian seasoned breadcrumbs, various spices which I never measure, ketchup, then I bake it part way then I put mozzarella cheese/parmesan cheese over top and baste with tomato sauce.
It makes me feel good that he likes it so much.

Am glad to meet someone with the appreciation for meatloaf. We had it last night..I don't measure either. no ketchup. What is the baking part way? Do you finish after applying the cheese on top? It is good when you make something that someone appreciates it!!

My friend made it about two months ago. It was good but a little on the plain side. Nothing that a little ketchup couldn't cure! I am always amazed at the different ways that people make meatloaf. My mum used to soak old crutons in milk then add them to the meat mix. It looks positivly disgusting when she was mixing it but it was never, ever dry and had a unique taste to it.

I love meatloaf, but it's been a long time since I've had it. My family used to have it for lunch almost every single day, but since then my mother decided that beef isn't that great for us and we've been having chicken most often with our lunchtime meals, as our meat side dish, instead of meatloaf. What I really loved was piling the ketchup on the meatloaf, anyway, lol, and i wouldn't be able to do that now since I have to be really careful about sugar. so I don't miss Meatloaf that much, as I wouldn't be able to enjoy it as much without loads of ketchup ^_~ But I would still love to have it again someday.

Ground turkey can be made into a meatloaf and ketchup is most welcome. In your case a seasoned tomato sauce with no sugar added. Thanks for responding my new friend.

The last time that I had meatloaf was probably over 30 years ago...I don't eat meat.
Now, I do have a fantastic recipe for a walnut cheddar loaf - it's made with brown rice, walnuts, lots of cheddar cheese. It is delicious. The taste has surprised and delighted the most dedicated meat eaters.

Its been a few months, but I will be making it again soon enough when my long-distance boyfriend is here for a few days around Valentine's Day. I like ketchup on top. In case anyone is interested, here's my recipe, it makes a pretty big, yummy meatloaf:
Preheat to 350F
Ingredients:
2 lbs ground beef
1 C milk
1 egg
1 cup bread crumbs
1 onion, chopped
1 1/2 T Worcestershire sauce
1/2 tsp "Italian seasoning" (it has oregano and basil and some other things in it)
1/4 tsp pepper
1/8 tsp garlic powder
Mix that all together in your hands, and put it in a big loaf pan. Coat with a little ketchup if you like to make a nice glaze. Pop it in the oven for about an hour and a half.
Enjoy :)

Me either. I don't like it very much, and I don't know how to make it.. so we don't have it at my house! I'd only eat it if someone served it to me at their house.
I remember as a kid dousing it in ketchup so I couldn't taste it!

Actually, I recently had meatloaf twice! Both at rather fancy restaurants. One of them was a dressed up meatloaf, made from beef. They piled it on top of garlic mashed potatoes and put a marinara sauce over it. It was very good.
the second was technically NOT meat loaf. it was made from veggies and beans and such. It tasted a LOT like meatloaf. It was also, very very good! Sometimes it's just what you need, i guess.

I make the lousiest meatloaf. Meatloaf was not of my liking as a child. Maybe that is why I can't make a good one today. My husband is Dutch and makes gehakt ballen which is basically a small meatloaf that is cooked in a frypan. The spices are different than traditional meatloaf. We buy spices specifically made for gehakt (ground beef) from petersimports.com. He does not put ketchup on the gehakt ballen. I know he uses onion, the gehakt kruiden and bread crumbs.

My husband LOVES meatloaf, but I don't really make it that often. We like ketchup mixed with brown sugar on top of it. And instead of using bread or bread crumbs in ours, we use oatmeal. I like it alot better that way. It's not as soggy as some of them get.

Wow, it has been a long time, I must admit, but I like it with onion soup mix in it.
Very tasty.
You add ketchup, every knows that the tomato is the condiment not what goes on top. Makes great sandwiches the next day too.
