What's for dinner? February 20

What's going on the dinner table tonight? Do tell! I had a salad for lunch and, well, it is another salad for dinner. My lunch one was just a plain "veggie lover's" bagged salad mix with dressing and croutons. Tonight's will be heftier. I'm making the Grilled Chicken Salad with Rustic Guacamole, Romaine, and Queso Anejo from Rick Bayless' Mexican Everyday cookbook. I have to make some adjustments to the directions as written. I don't have a grill so I'm just going to pan-sear the chicken and onions. I also don't have queso anejo so instead I'm going to use queso fresco. I still think it will be delicious. We shall see! That's what is happening here. What are YOU having? I want to know!
