Fried potatoes, edited post

I absolutely adore fried potatoes. Yes, I know some of you do, also. I like them fried at times with carrots, bacon, onion powder and topped with cheese and sour cream. They seem to take a long time to fry with breakfast, but I cooked them a little differently this morning. I baked them whole in the microwave until just starting to get tender. Then I chopped them up (including the peelings) and fried them in bacon grease, butter, salt, pepper, onion powder, and a spoonful of mayonnaise. Yep, mayo. Maybe I'm just late to the party, but have you ever fried anything with mayonnaise? It did seem to make the potatoes crispier. Any advice about using mayonnaise this way? EDIT: I just learned that mayo seems okay to fry with under certain circumstances. The water or egg in it might not do well cooking veggies. But to quickly fry something like grilled cheese is good. I fried the potatoes in more bacon grease and canola oil and a little mayo. Not sure if the potatoes would fry well in mayo only.

That's an interesting idea, and I bet it tastes great too. After all people use it all the time in potato salad

I LOVE potatoes in any way, shape or form as long as they don't have onions in/on them. Have a good day.

Hi, Linda. We love the taste of onions, but tummies won't tolerate them, so I just use onion powder. Our son Robert can't eat them in any form. How are you doing? Is there still a lot of paperwork? I know you miss your husband terribly.

@1creekgirl Seeing a lawyer tomorrow. He will fill out and have some of the paperwork notarized. Will take some of the pressure off me since some of the forms are not user friendly. How are you doing? Yes, I miss my husband so much.

@LindaOHio I know you feel lost without him. I hope the lawyer will be a help to you. Except for my back, I'm doing pretty good. And some days it hurts less than others. Dale got potatoes planted this week, so we're looking forward to fresh taters.

I can't help you but Vince often parboils potatoes well before he needs them. Then they don't take so long to cook later.

I like roast potatoes. Not heard of frying with mayonnaise, sounds a bit weird!

You are like my Dad, he just loved fried potatoes. As a pre-teen I learned to make them the way that he liked them. He liked them fried in bacon grease, saved, and when fried, mashed down with a masher and then served with a bit of chili sauce on the side. I have baked things with mayo, I used to make a chicken recipe which called for mayo and then bread crumbs for the coating of the chicken, but I have not fried anything with it.

Yep. Fried potato fan here as well. I have never used mayo to fry anything. Of course, we never have mayo in the house, preferring the Miracle Whip style "dressing" over it.

@porwest I made something new yesterday: fried biscuits. I mixed up some Bisquick, rolled them flat and in flour, then fried them in butter. Not bad, but I'm still tweaking it some. Maybe not very healthy, but you know me...I fry everything.

@1creekgirl Not sure. The ingredients are similar, though. So far as I am aware it's just mayo with some added flavors and seasonings.
