We tried a new (to me) dish

Our grocery store sent out a mailer with some coupons in it, and a recipe. My husband loves looking at and trying new recipes.
This recipe was for colcannon. I had heard of it before, but it did not appeal to me. Bob, my husband says "Oh, I remember that from grandma's". Of course he would, it is an Irish recipe, and his granny was Irish and ruled the rather large family. On Sunday you WOULD be at the Big House for dinner, unless you were dead. I did not like the recipe in the flyer. It was made with kale.
I had not ever been interested in colcannon before anyway, but I looked up some recipes online and the idea grew on me.When I read about it years ago it did not appeal at all. It is often made with green cabbage. One website said that there are as many recipes for it as there are Irish cooks.
So basically the dish is sauteed green cabbage stirred into mashed potatoes, and often with scallions added at the end.
That is not very enticing just to read it that way, but when you fill it with butter and cream and some garlic---Yum!.
So, that was our vegetable and our starch for supper. We also had smoked beef dinner sausage, and yogurt with crushed pineapple. I have a huge container of it saved for later this week too. It makes an excellent side dish.
Now I am off to bed, to deal with "spring forward" tonight.

@snowy22315 I do not care for kale, and I had some cabbage that needed used. Another place I have seen Kale, but I use spinach is Suppa Toscanna, a potato soup.

I think I read you could use other greens. The proportions were four cups of chopped raw greens to three pounds of russet potatoes. I bought Kale maybe twice. I wanted to try to like it, but no success.

That sounds interesting... I'll look up a recipe and see if it's something Pretty will be interested in trying, too.
And we only have one clock in the kitchen that doesn't change time by itself.

@GardenGerty I overslept this morning... I normally am awake all night but fell asleep watching a movie and slept until 10 am... I took my morning meds late but that's still okay. At least I didn't need to be at a job early this morning.

I figured it might strike you as interesting. Cabbage and potatoes are pretty cheap, but the flavor was great. I bet some of the butter could be replaced with bacon fat and crisp bacon would make a great garnish.

About butter and cream, a little is probably okay. Some people will tell you it is better for you than oils made from plants. You could try using lowfat milk and whatever cooking oil you use.

I imagine you can use some other kind of greens. With all the butter the cooked cabbage was quite tasty. I do not usually want it either.

Probably there are some of your country mates that make it. It is simple enough and probably was what stretched all those meals that the poor Irish had.

It is interesting that how a simple grocery store mailer can spark the whole idea for a whole meal plan! Colcannon sounds like a nostalgic dish for your husband, given his Irish roots and memories of his granny’s Sunday dinners. I understand why the kale version in the flyer did not appeal, but the traditional cabbage version with butter, cream, and garlic sounds delicious. A dish that once seemed uninteresting can grow on you when you adjust it just right. Combining it with smoked beef sausage and yogurt with pineapple looks for a well-rounded meal. Having extra for later is always a good idea as leftovers make life easier. Hopefully, the time change would not mess with your sleep too much. Have a restful night and a relaxed weekend!

We are taking it easy today. We went to church and also went to a couple of stores to look for an item my husband wants. I napped in the car coming home. He is napping now.

I have fussy eaters in my home. New recipes are abundant and I often think of trying them. Unfortunately that doesn't happen much. I need to stick with the basics or I'll end up feeding most of it to the chickens.

With just the two of us, we can try new things. Anything to get hubby to eat more. He is the one that seems to find them. If it was me it would be put the potato in the microwave, and when done add butter and sour cream, maybe cheese.
