What's for din? March 10th, 2025

I just finished making dinner and washing up the dishes, then I whipped up some dessert, so I’m finally sitting down to eat now. I know this probably doesn't matter to anyone, but I felt like sharing anyway. So, I made some "easy" beef enchiladas. I thought the kid would dive right in, but he totally passed. Luckily, I had enough flour tortillas, taco meat, and cheese out so he could just make tacos if he wanted to. Of course, as soon as he saw the dessert I was working on, he decided he’d be having some of that later. Which probably means he’ll end up having easy mac and dessert for dinner, but hey, you can't win 'em all, right? So yeah, that’s what we had for dinner tonight. What did you all have at your place?

Enchiladas of any variety of ingredients are always yummy good, hands down. Yours look delicious. I made baked teriyaki pork steaks with a salad on the side. We decided to skip a starch this time.
