What's going on the dinner table tonight? Do tell!
I'm making a new recipe--Lasagna Roll Ups with Cottage Cheese--from the Skinnytaste web site. I'm Italian-American and have always thought the idea of using cottage cheese in lasagna (like Sandra Lee does) is crazy but, well, it is higher in protein than ricotta, I'm trying to get more protein into my diet, and I have a container of it in the fridge. Soooooo we shall see how this goes. I had leftover homemade vodka sauce in the freezer so I'm using that instead of marinara. I also don't have pesto so I will just have to use a bunch of dried basil to get that flavor in there. It won't be true to the original recipe but it is an opportunity to see how cottage cheese does as a substitute in lasagna.
That's what is happening here. What are YOU having? I want to know!

I always used to use cottage cheese. I think it works quite well. I hope you enjoy it. Have a great day. I had a turkey/mozzarella sandwich and some chips.

Wait a minute. You once literally SCOLDED me for mentioning using cottage cheese in a traditional meat lasagna and NOW you're gonna use cottage cheese in roll ups?
Hypocrite!
In any event, we ordered a pizza for delivery last night from our local Pizza World. An extra-large thin crust with sausage, mushrooms, onions and green peppers with some cheesy garlic bread on the side. It was delicious and we have leftovers to boot.

@porwest Like I said it wasn't bad. I probably wouldn't have noticed if someone served them to me and didn't tell me that it was cottage cheese and not ricotta. I wouldn't go out of my way to buy cottage cheese specifically for lasagna but I'd use it if I had some in the fridge that I needed to use.
