What's going on the dinner table tonight? Do tell! I'm making a new recipe--Lasagna Roll Ups with Cottage Cheese--from the Skinnytaste web site. I'm Italian-American and have always thought the idea of using cottage cheese in lasagna (like Sandra Lee does) is crazy but, well, it is higher in protein than ricotta, I'm trying to get more protein into my diet, and I have a container of it in the fridge. Soooooo we shall see how this goes. I had leftover homemade vodka sauce in the freezer so I'm using that instead of marinara. I also don't have pesto so I will just have to use a bunch of dried basil to get that flavor in there. It won't be true to the original recipe but it is an opportunity to see how cottage cheese does as a substitute in lasagna. That's what is happening here. What are YOU having? I want to know!
