We are having Hamburgers and a new potato recipe. You take small potatoes preferably yukons and boil them with skin on them. While they are boiling take a sheet pan, put Olive Oil where you will put the Halves of those potatoes. Add Mild Cheddar cheese or whatever cheese you like. When the potatoes are soft. Take them out and cut in half. Place the halves on top of the cheese. Then take a glass jar or potato masher and smash them on the cheese. Then add what seasonings you want to use. I will be using salt, peppe, paprika, and garlic salt. Add more cheese. and top with some more Olive Oil. Put in oven for 20 minutes at 390°. Take them out and use the dip of your choice. We are using ranch.

Those potatoes sound amazing. Almost sounds like twice baked, but not sure it's the same thing.

They were good, but not exactly what I thought they would be. I expected them to be more crispy on the outside and soft on the inside. They were not that crispy..BUT, I used russet potatoes and the video called for Yukon. That might have been the difference. I will try them with Yukons and give it one more try. I got the recipe on youtube. The guy always starts his videos with "You mean it took me 40 years to find out I needed to...." He has 2 channels..Dustin Hadley and That 40year Guy. Fun to watch him try things.
