Coconut flour cookies

Yesterday, I tried my hand at coconut flour cookies. They turned out good. Coconut flour has no carbs and can even be used on a keto diet. The cookies were simple to make and I added some chocolate chips to them so they were even better. I knew I would like these because I am a big coconut fan. I had one with my breakfast. Have you ever made anything with the alternative flours that are available?

What kind of cookbook? Was it a diabetic friendly one? What's your best recipe? Not diabetic here, but I am always looking for good things to eat.

Pretty uses quinoa flour to make cookies once in a while but I didn't like them. *shrug* More for her, I guess. I've only used wheat flour when I was baking.

@snowy22315 Uhm... if you aren't sure what the flour can be used for, why did you buy it? I'm always willing to try new/different things but I always want to know what we're getting it for or it's just a waste of money to me.

I've used coconut and almond flour which had great flavors and are gluten free. I'm sure your cookies were delish.

I haven't tried any alternative flours except for whole wheat flour. My husband has a food intolerance towards coconut, so that takes it off of the list as far as I am concerned.
