It is late for me for breakfast but I slept in and I was waiting on Bob to get up. In the oven is Kropsua--Finnish baked pancake. It is much like Dutch Baby or Pfannekuchen. Eggs, milk, sugar, butter and a bit of flour to hold it together. On top of the stove is corned beef hash cooking on an iron griddle. So, although it is late, we shall eat a hearty breakfast, with some fruit on the side. I probably will make some kind of fruit and yogurt smoothie for lunch and tonight we will have bean soup with corn bread, from the freezer. We are staying home today.

I was not aware of baked pancakes.

. I always thought that pancakes are to be made in pans.

Generally if you say "pancake" people think of a dough cooked in a pan on top of the stove. I cooked it in a pan in the oven. If it fit my schedule I would always eat a big breakfast and then smaller meals in the evening.

I’m having lunch for breakfast, as usual. I have to stay home tomorrow (three deliveries), so I’ll be cooking Boca burgers tomorrow.

We are trying to stay home, until Friday. We are going to make a day of it. It will be a discussion or two.I have never tried Boca burgers, how are they.

@GardenGerty — I think they’re the best of the store-bought veggie burgers that I’ve had. There was one place in Chicago who has on-site-made veggie burgers that were simply on another level.

Your breakfast sounds delicious. I had poached eggs this morning that I made in the microwave. I sprinkled some bacos on top. Doesn't replace bacon, but not too bad.

Good morning. I woke up for a bathroom break and will be going back to sleep in a little while. I hope you guys enjoy your breakfast this morning. It looks like a pretty day outside but that wind could pick a person up and blow them away. It's already 70F at 10:50 am with 24 mph winds.

Breakfast was great. Even better, we shall have leftovers tomorrow. Yes, we still have wind advisories. I heard somewhere that it might snow for four hours tomorrow.

@GardenGerty We have snow advisories here for tomorrow late evening/overnight. We're supposed to be well below freezing then. Leftovers are always good! I made Yumasetta last night and there are always leftovers from that.
