Tonight’s dinner

I usually make corned beef around the time of St. Patrick’s Day. That’s when it’s at a big sale. I finally made it today. To go along with the corned beef I sautéed some cabbage and baked some sweet potatoes, which I diced. And for dessert I still have some Irish soda bread left over. Should be a yummy dinner. Can’t wait to dive in. There should be enough for two dinners so no cooking tomorrow. Yay!

@JudyEv I know I have seen it. I have never eaten it. From what I can recall of it, it never looks appealing.

I agree. Usually I make corned beef at least twice a year. Man, that's good eats.

I wanted to make a corned beef as I do pretty much every year, but this year they were WAY too high in price, so I decided not to. I will look for a sale now that St. Patty's Day is behind us.

@porwest I regret getting only one. Could’ve gotten more and just froze it. I don’t like to freeze meat but I’d make an exception. I do that when my mom buys too much meat from a butcher lol.

My supermarket had it on sale and there was also a digital coupon. It was $1.39/lb if I remember correctly.

No way lol. I don't bake. Hubby bought it. Though not a huge fan of this one as it has caraway seeds in it. I don't mind them but not in Irish soda bread.
