How do you make meatloaf

Feel free to tell me what is a must have if you make meatloaf. I do not have any really set way to make it as it always depends on what I have on hand.
Tonight I had 1 and 1/2 pounds of ground beef and a pound of breakfast sausage for my meat. Other times I do more 50-50.
What I did different tonight was instead of putting it in a loaf pan or other baking dish I lined a cookie sheet with parchment paper. I formed my loaf by hand in the middle of the tray. I like it, it came out well, but I think it had too firm a crust on it for Bob.
While the oven was on I also made a turkey casserole. Our meals should be pretty well taken care of for next week. I really like that.

When I make mine on a cookie sheet I always slip a little rack under the meat to catch the drippings.
I always add an egg and bread crumbs to my meatloaf and then season it lightly with some barbeque sauce before forming it into the loaf.
Maybe we should have that tomorrow, we haven't had it in forever around here-thanks Heather.

@GardenGerty I had 2 one pound packages of ground beef in the deep freezer still from the last quarter of beef that I used up. I made a lasagna with it and froze some of the cooked ground beef to put into freezer bags to use on another night for a different meal.

I have used turkey with the beef. I am trying to make sure my iron levels are high, as I am scheduled for a power red blood donation. If you are not high enough you can't.

I rarely make meatloaf. When I was growing up it used to make mom mad because I wouldn't eat the meatloaf she made. It was always dry even if I poured a bottle of ketchup on it. (Mom said I "ruined the taste" by adding ketchup.
) I know mom was trying to make the meat stretch to feed our large family by adding bread crumbs to it but I think that's why her meatloaf was always dry.
When I do make it, I don't put any bread into it at all. I put onions and bell peppers with ground beef and ground sausage (3/4 lbs hamburger and 1/4 lbs premium sausage). I add mustard, and ketchup along with an egg as I'm mixing the meats together and form the loaf and drop it into a loaf pan. Then drizzle barbecue sauce over the top before sticking it into the oven.
I just use it for sandwiches.

@GardenGerty I really don't know... I tried her meatloaf several times but never did like it. She finally stopped putting it on my plate when she found out I was feeding to the dogs under the table.

We have a friend staying. She went to the farmers' market and got carried away. We had her lasagne last night then had the leftovers for lunch then we'll have a beef and Guinness pie tonight and there'll be more leftovers for lunch tomorrow and we still have a pizza in the fridge that she brought. As you can tell, she is a very generous lady.

That is wonderful. Bot the meals you prepared are delicious ones.
I'm not sure if meatloaf and meat pie resemble each other or are completely different.
Your post reminded me that it has been long since I bought a meat pie.

That's how mom did it. Form it by hand and put it on a baking sheet. George and I don't eat enough for me to do something like that.

I make mine like you made yours today, free form on parchment paper. I have only used mixed meats once when I bought a pack of meatloaf mix meat that was on sale. Neither Mike or I really liked the different meats, so we just stick with ground beef.
Like you I add what we have on hand, onion, garlic, celery, peppers. We used to put the ketchup mixture on top, with mustard and brown sugar but Mike got bored with that. We tried barbeque sauce a few times; it was okay. Mike prefers nothing on top now a days which is fine with me.
Your meals sound good.

I am the cook in the house, but the one thing my wife does make is meatloaf, and it always turns out great. We generally use 2 pounds of ground beef, a couple of eggs, breadcrumbs, a packet of French onion soup mix, and a wet ingredient that varies. But it's always firm and always tasty.

@GardenGerty It's a nice touch. Funny, the only two things I ever use this for is meatloaf and when I mix it with sour cream to make French onion dip. I never make soup with the stuff. lol
