What's for dinner? April 8

What's going on the dinner table tonight? Share with us! It is Mexican night here though not Taco Tuesday. Do you guys remember member John Roberts? He had tacos every Tuesday. I decided to go with cheese enchiladas. I'm not even putting chicken in them. I just want lots and lots of cheese. Hey I'm down several pounds on the scale so I can handle it. I'm using a recipe from the Chevy's Fresh Mex (restaurant chain) cookbook. To go with it I am making their Red Rice and also their famous Sweet Corn Tomalito. I will have leftovers for days. That's what is happening here. What are YOU having? Do tell!

I miss that guy, our own Mr. John Roberts, and really wish we knew the actual story behind his sudden departure, but I suspect it was a heart attack.

Yes I remember John Roberts. I had another Buffalo chicken/cheddar sandwich with chips. I bought some more gnocchi and will have that some night when my husband's cousin is here.
