What's for dinner? April 11

What's going on the dinner table tonight? Share with us! I'm continuing to try new recipes in the Chevy's Fresh Mex cookbook. Tonight I'm making Lemon-Herb-Chipotle Roasted Chicken. I haven't roasted a whole chicken in awhile. I already have leftover chipotle puree to use on the chicken as well as some red rice and corn tomalito both leftover from a couple of days ago. The only thing I'll actually have to make is the chicken. That's what is happening here. What are YOU having? I want to know!

Maybe I'll microwave one of the breakfast frozen dinners. I need to eat those up.

That chicken sounds amazing! I’m keeping it simple tonight. Probably pasta with garlic, olive oil, and some veggies I have on hand. Quick, easy, and comforting!

Your cooking is always so ambitious, I admire that. I wasn't feeling the greatest today, so for supper I just made toast and put peanut butter on it with sliced bananas. My hubby fended for himself.

We bought fish and chips to take to the clubhouse and we took a cheesecake (actually it was a beesting cake) to share with everybody.
