Sure I love brussel sprouts but I had forgotten about bean sprouts. They are so great on sandwiches instead of lettuce. So tasty and chuck full of nutrition. They are great sources of protein, fiber, and vitamins C and K. Also, minerals such as potassium, calcium, magnesium and iron. So they help our digestion, lower the risk of heart disease, and improve blood sugar levels. I used to have a set of specialized jar lids to help in making the sprouts at home. I wonder if they still have them at the health food stores. Just becareful of the ones you buy in the stores. Wash them good to avoid any possible food poisoning.

I haven't considered bean sprouts on a sandwich, will have to try it sometime.

I remember when you could buy sprouts in bulk. The home raised sprouts are actually green and better for you.
