Time for matzo ball soup

It’s Passover so that means it’s time for some matzo ball soup. I bought some fresh chicken yesterday and am gonna make some matzo ball soup.
I put the chicken into a large pot of water and add lots of salt along with chunks of carrot, celery, and onion. Cook it for 1.5 hours after it comes to a boil and it’s ready to eat.
I make matzo balls separately (from a matzo ball mix) and then add it to the soup when it’s time to eat. I like to include pieces of chicken and also the veggies from the pot into my bowl of matzo ball soup. Nothing goes to waste and I actually love the boiled carrots, celery, and onions. Garnish with fresh dill. Delicious!

@lovebuglena You're welcome. I know what chicken stew looks like. I've never heard of matzo balls, though.

@DaddyEvil if you use the mix all you need is two eggs, two tablespoons of oil, and a packet of the matzo ball mix. Mix it all together, put in fridge for 15 min, and then roll into small balls and cook in boiling water for about 20 min.

@LindaOHio it is. Matzo is good. But I bet if you eat a lot of it you’ll gain weight.

I was just thinking about matzoh ball soup the other day. I have had it a few times in Pittsburgh in a Jewish neighborhood. I might try to make it sometime. Its pretty good as a I recall.

I saw this on a video recently..9News had some Jewish guy on there explaining and showing all the Passover dishes. Never had any of them.

That does sound like a very healthy and delicious soup. I love soups, I would enjoy everything in it except the chicken or any meat as I am a vegetarian by choice. I might add some boiled eggs to it before serving.
