What's for dinner? April 20

What's going on the dinner table tonight? Share with us! I'm still full from Easter brunch earlier today. If I do wind up hungry I have leftover pesto lasagna in the fridge so I can heat up a piece of that. I'll ask my neighbor if she wants some when she gets here in about 2 hours to pick up the dog. My freezer is overflowing so I don't have much room to freeze some of it. In fact I'm going to take out a jar of homemade marinara sauce to thaw to make tomorrow's dinner. Of course that will produce more leftovers and the vicious cycle will continue. That is what is happening here. What are YOU having? Do tell!

We aren't really traditional people, it being Easter we decided to have sirloin steaks, baked potatoes, mushrooms and a vegetable yet to be determined. I made a carrot cake yesterday, and we will splurge and have that for dessert.

We're full from Easter tea or maybe it was tapas? We had asparagus, canned dolmathes, a chunk of hearty bread with Boursin cheese, green olives, deviled eggs-pesto and mustard. I just had a very small piece of homemade cake and I am stuffed. Oh and tea- Scottish breakfast tea with a bit of home fresh mint.

I thought I was going to get some ribeyes, but last minute I decided on a ham. So, I got a 9 pound one and cooked that up with some buttered, glazed carrots and stuffing on the side and we had mom over.

I didn't do anything special for Easter dinner. Since I had Easter brunch at church this morning, I just had lunch for dinner. Just a sandwich with deviled egg salad, yogurt, tapioca pudding, and tea.No cooking involved.
