What's for dinner? April 22

What is going on the dinner table tonight? I want to know!
I'm making a couple of things from the surprisingly good Margaritaville cookbook--Steak Oscar, Key Lime Hollandaise, and JWB Creamed Spinach. I'll make some mashed potatoes to go on the side. Yum.
I love hollandaise sauce so you just know I'll be having some on some poached eggs tomorrow morning for breakfast.

I had a turkey & cheese sub from Zero’s, a localized chain of sub shops. There’s ONE that’s not in Virginia, and that one is the one I went to. (It’s in Bristol, Tennessee, near the border with Virginia.). I also picked up four grub steak and cheese subs for my brother. He’ll need them for physical therapy after he gets his rotator cuff repaired next week.

Mashed potatoes are a big part of my diet.
Half probably of my total food intake.
The other half is cabbage.
I am having mashed potato ( just one) with cabbage.

We are trying to go through a crap ton of leftovers before we leave on Thursday for our first camping trip of the season. Last night it was a smorgasbord combo of a chicken parmigiana pasta I made, some fried rice and a piece of On-Cor chicken parmigiana that was left.
We made a 9 pound ham on Sunday and had mom over, but still have a crap ton of that left too. Before we leave I'll freeze what we have left and use it next week for a ham and bean soup probably after we have ham sandwiches tonight for dinner.
