How do I backup sharepoint services?

I would like to be able to backup Sharepoint Services 2003 and verify that it was actually backed up. Currently, I am using MS SQL 2000 and Veritas to backup everything on the Sharepoint server, but i am unsure if it is backing up Sharepoint. I want to make sure i am backing up everything i need to incase of a server failure.

When you back up and restore a site, you actually perform three separate operations: First, you back up the site to a single file. Then you create a new empty site as a destination. Finally, you restore the backup site to that destination.
