Tips? Servers / Bartenders

I was reading the discussion about bad tips, and -- on a related note, but not quite the same -- it sparked my interest in finding out some averages of the industry around the world.
I work as a server at Pizza Hut franchise in a small Canadian city. There's not much of a big-tip scene around here... anywhere, really. It does seem that the bartenders & shooter girls make significantly more in tips than servers in restaurants and taverns around the city, though.
Anyway, I'm interested about what some of us are making elsewhere! Also, how much are we pooling or tipping out, and how does your tip-out and payment system work?
In Canadian funds, I make $9/hour and $80-$100 tips on a pretty good shift, up to $200 on a great shift. The good news is that I pocket all of my tips directly. We don't tip out at all to the kitchen (although they deserve it) and we don't pool or divide tips; we're the only restaurant in the city with this technique.
Bartenders make a few hundred a night. Servers at the nicer restaurants too. We suffer from the confusion between fast-food chain and restaurant. Oh well.
So, servers, bartenders, and anyone in the service industry really:
What type of places are you working at? What are your wages? How much in tips do you make on an average shift? And do you pool them, divide them, tip out?
I'm very curious!
