Alcohol chocolates - recipe

I want to make chocolates for my family for christmas gifts. I have been searching everywhere for a recipe for "alcoholic chocolates"I have tried making ganache and adding alcohol but they are too sweet and sickly. Has anyone got any idea how to make the type that you bite into and it is just liquid. I know you can not just make the moulds and add alcohol in the centre as the alcohol just eats away at the chocolate, there must be something you do to stop this happening or something you add to the alcohol to stop it. If any one has any ideas I would much appreciate the help.
