Ketchup is first found mentioned in a book by Charles Locklear in 1711. The book was " A Account of Trade In India " So I am assuming that Ketchup has been made long before any of us thought it was. In India it was similar to todays Ketchup but contained Fish Sauce. As it started to be used in Britain and later America the Fish Sauce was left out and what we know as modern day Ketchup was born. The spelling Catsup was seen in American books and is first mentioned with that spelling in a book called " Dictionary of The Canting Crew " in 1690. Over the years really it came down to what part of the country you lived in as to whether it was spelled Ketchup or Catsup.
There are currently products with both names sold in US and Britian Grocery Stores with Ketchup being used much more frequently. There is a delightful Florida produced Catsup made from hot peppers and yellow tomatoes. And sold under that name in many Florida roadside produce stands. It is yellow in color and has a lot of fire and is excellent on Seafood. But most Americans only know the red stuff known as Ketchup. There was a recipe for Ketchup in Newspapers that made the rounds in the 1920's and 30's. Later it was reprinted in many American Seed Catalogs as they tried to sell you the tomato seeds to grow to make the Ketchup.

i thhink ketchup is the CATCH UP not cats up. because if you heared about Kleenex tissue paper then it is the derivation of CLean. so most of people change the spelling according ot its sound. i just write what i think about it.. wondering whats the truth behind ketchup?? hahahahahaha
