What should I cook tonight?

I was thinking of making something with chicken.
A friend of mine told me that peanutbutter chicken is pretty good, and that same friend usually has some pretty good tastes, similar to mine, but I don't even know. Sounds good, but I'm not sure.
I was also thinking about maybe trying to do like...rice and eggs. I've been enjoying eggs a lot lately, and I'm not sure why.
Any suggestions, anyone?

Onion Rice Pilaf

INGREDIENTS
1/2 small onion, chopped
1 tablespoon butter
1 cup uncooked calrose rice, rinsed
1 1/2 cups chicken broth
DIRECTIONS
Heat the butter in a skillet over medium heat. Stir in the onion, and cook until soft and translucent.
In a small saucepan, combine the rice, onions, and broth. Bring to a boil over high heat. Reduce heat to low, cover, and simmer 30 minutes. Remove from heat, let cool for several minutes, then fluff with a fork.
Rice Pudding With Dates

"Rice pudding sweetened by dates rather than much sugar, can be eaten warm or cold."
INGREDIENTS
2 cups cooked white rice
2 cups 2% milk
3 tablespoons white sugar
15 dates, pitted and chopped
DIRECTIONS
Place the rice into a food processor or blender, and process until coarse, but not pureed. Transfer to a saucepan, and stir in the milk, sugar and dates. Cook over low heat, stirring occasionally until the dates are tender, about 20 minutes. Serve warm or cold.
Oven Brown Rice

INGREDIENTS
1 cup brown rice
1 cup beef broth
1 (14.5 ounce) can chicken broth
1/4 cup butter, melted
1 teaspoon garlic salt
1 teaspoon seasoned salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a 2 quart casserole dish, mix together rice, beef broth, chicken broth, butter, garlic salt, and seasoned salt. Bake uncovered in preheated oven for 60 minutes, until liquid is absorbed and rice is tender.
