Need some ideas for Christmas Brunch

Anyone have some great easy casserole dishes for a breakfast brunch? I am having all my family over for the last year as we will be moving so I am expecting a lot more people to come this christmas morning, but I need some ideas on some great breakfast casserole dishes, that are quick and easy to make!!Thanks so much

Country Breakfast
1/3 cup butter or margarine
4 cups cubed cooked potatoes
1/2 cup chopped green pepper
2 Tbsp. chopped onion
4 eggs
1 cup Shredded Cheddar Cheese
MELT butter in large skillet on medium heat. Add potatoes, green pepper and onion; cook until potatoes are lightly browned, stirring occasionally.
ADD eggs, 1 at a time, to potato mixture, spacing eggs evenly over the potatoes; cover with lid. Cook until eggs are set.
SPRINKLE with cheese. Cover and continue to cook until cheese is melted

I personally would do a buffet style breakfast its fast and its easy and they serve themselves, put some scrabbled egges, sauge links or patties. bisquits and gravy, fresh fruit, bacon.. Just a little bit of everything you would make for breakfast maybe even some pancakes I think it would be easy. merry christmas and good luck
