Tex-Mex Food

Where I used to work there was a Mexican restaurant that we would get take out from. They specialized in Tex-Mex food. I spoke with the owner alot about the food since the menu was different from other Mexican restaurant that I have been. I though the food was great. Is there anyone that has any good recipes that I can try out in the Tex-Mex style. I would love to introduce my family to this food.

Tex-Mex Burger with Cajun Mayo

"A jazzy way to spice up the boring basic burger that will tantalize your taste buds! Cajun spiced mayonnaise is the perfect compliment to these spicy beef burgers."
INGREDIENTS
1/2 cup mayonnaise
1 teaspoon Cajun seasoning
1 1/3 pounds ground beef sirloin
1 jalapeno pepper, seeded and chopped
1/2 cup diced white onion
1 clove garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon Worcestershire sauce
4 slices pepperjack cheese
4 hamburger buns, split
4 leaves lettuce
4 slices tomato
DIRECTIONS
Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.
Tex Mex Shark and Shrimp

"This is a great spicy recipe for shark and shrimp. You can probably get non-seafood eaters to enjoy this! I did!"
INGREDIENTS
1 (16 ounce) package uncooked wide egg noodles
1 teaspoon olive oil
1 pound shark steaks, cut into chunks
1 pound frozen medium shrimp
1 (14.5 ounce) can diced tomatoes and green chiles
2 cups shredded mozzarella cheese
ground black pepper to taste
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add egg noodles, cook for 6 to 8 minutes, until al dente, and drain.
Heat the olive oil in a skillet over medium heat. Mix in the shark, shrimp, and tomatoes with green chiles. Cover, and cook 15 minutes, or until shark is easily flaked with a fork.
Serve the shark mixture over the cooked egg noodles. Sprinkle with mozzarella cheese, and season with pepper.
