Whats for dinner tonight? Ever get tired of eating the same few meals over and over? I sure do! Spaghetti, tacos, hamburgers, chicken....and over again. Lets see....I think tonight might be an out to eat night at the Mexican restaraunt! Gotta love the cheese dip!! Whats for dinner at your house?

A quick chicken cassirole. I use a ready to eat rotissery chicken and it only takes 30 minutes. I love it!

Those rotisserie chickens that are ready to eat are so conveneint and they are pretty good too! We sometimes get them from the grocery store for a quick meal. You sure cant beat 30 minutes!!! Sounds yummy!

I like those rotisserie chickens but they're really too pricey for me to buy so instead I bake two or three Sticky Chickens and use the leftovers for miscellaneous meals throughout the week. My horde prefers the sticky chickens over the store bought rotisserie chicken and it saves us a lot of money!

Tonight is YOYO (You're On Your Own) night at our house. The choices are: leftover deer stew, leftover low carb enchilada casserole, or make it yourself breakfast. :)

We had spaghetti last night...love it with parmesan cheese and sharp cheddar cheese baked on! Never had yogurt with spaghetti though! :)

BASIL AND TOMATO PASTA
Pasta is always served with a sauce in Southern Italy and the sauce invariably includes tomatoes, onions and garlic amongst its ingredients.
Basil and tomato sauce is arguably one of the best known pasta sauces of Italy. Bow tie pasta or farfalle is accompanied with this famous basil and red tomato sauce.
You can prepare larger quantities of this sauce and freeze it. Parboiled vegetables can also be added to this recipe.
Preparation time : 15 mins.
Cooking time : 15 mins.
Serves 4.
Ingredients
3 cups cooked bow pasta (farfalle)
For the basil and tomato sauce
1 1/2 cups tomato pulp
1 tablespoon garlic, chopped
1 onion, finely chopped
1 teaspoon chilli powder
2 tablespoons tomato purée
1 teaspoon sugar
4 to 5 tablespoons fresh cream
12 to 15 basil leaves, chopped
2 tablespoons olive oil or butter
salt to taste
For the garnish
4 tablespoons grated parmesan cheese or processed cheese
a few basil leaves
For the basil and tomato sauce
1. Heat the olive oil in a pan, add the garlic and onion and sauté till the onion turns translucent.
2. Add the tomato pulp and cook till the sauce thickens (approx. 5 to 7 minutes).
3. Add the chilli powder, tomato purée, sugar, salt and 1/2 cup of water and bring to a boil.
4. Add the cream and basil leaves. Mix well and keep aside.
How to proceed
1. Just before serving, re-heat the basil and tomato sauce and toss the bow pasta in it.
2. Serve hot, garnished with the cheese and basil leaves.
