Disney World November 2007 with birthday

Hello all. We are going to Disney World next november and will be celebrating my son's 6th Birthday while we are there. Anything exciting Disney does for birthdays? Also, we will be there around the Holiday's so all of the Christmas activities will be in full force. What are some things we can do there? When should I make reservations at the restaurants and also any other special activities we should make in advance. What are some must see things we don't want to miss? I will be traveling with my husband, 2 kids ages 6 and 3 and my parents. Sorry everyone, I am a bit ignorant when it comes to Disney since I have never been there. Any information would be awesome.
