Here is the first one from me. Quick and easy and delicious..........
Sabudana (Sago Seeds) Khichdi
This Indian snack food made with sago is a traditional favourite, often enjoyed during periods of fasting especially in Rajasthan and Madhya Pradesh states of India.
Prep Time: 15 Minutes
Cook Time: 15 Minutes
Ready In: 5 Hours 30 Minutes
INGREDIENTS: (Serves 2)
1 cup dry sago seeds (medium size, they come in 3 varieties fine(small), medium and large)
1 tablespoon butter ghee or cooking oil
2 green chillies, chopped
1 teaspoon cumin seeds
1 potato (small)
2 tablespoons coarsely ground peanuts (preferably roasted) or whole peanuts (as per choice)
1 tablespoons grated fresh coconut (optional)
Salt to taste
½ teaspoon red chilli powder
2 tablespoons chopped coriander (optional)
1/4 cup plain yogurt (optional)

DIRECTIONS:
1. In a bowl, soak the sago4-5 hours, or overnight, in enough water to cover.
2. Mix the salt, red chilli powder and roasted peanuts in the sago after draining excess water if any
3. Melt the ghee in a large saucepan over medium heat. Reduce heat to low, cumin seeds let them splutter. Add green chillies. Wait for a minute and add chopped potato. Cook and stir until the potato is cooked
4. Stir the sago mix in the saucepan. Over medium heat, cook and stir about 10 minutes, until sago is crisp. Add a little water if it is very dry while cooking.
5. Top with yogurt, and garnish with coriander and coconut to serve
