here is the recipe of my fav-
SPAGHETTI VERDI
Spaghetti tossed in a spinach and cheese sauce with colourful vegetables makes a delightful recipe.
The beautiful green colour and good coating quality of the sauce makes it useful when serving along with pasta for a lunch or dinner.
The cheese spread blends beautifully to give a thick and creamy sauce.
To retain the fresh green colour of spinach, blanch the spinach and refresh quickly in ice-cold water. You may add a pinch of soda bi-carb to the water in which spinach is to be boiled. This also helps to retain the green colour of spinach.
Preparation Time : 10 mins.
Cooking Time : 15mins.
Serves 4.
Ingredients
3 cups cooked spaghetti
For the sauce
4 cups spinach leaves, finely chopped
1 cup spring onions with greens, finely chopped
3 cloves garlic, finely chopped
1/2 cup red pepper, sliced
1/2 cup cheese spread
11/2 cups milk
3 tablespoons butter
salt and pepper to taste
For the sauce
1. Blanch the spinach in boiling water for a minute. Drain and refresh in ice-cold water. Drain again and purée in a blender. Keep aside.
2. Heat the butter in a pan, add the spring onions and garlic and sauté for 2 to 3 minutes.
3. Add the red pepper and sauté for another 2 to 3 minutes.
4. Add the spinach purée, cheese spread, milk, salt and pepper and mix well. Bring it to a boil while stirring continuously. Remove and keep aside.
How to proceed
1. Just before serving, re-heat the sauce, adding a little milk or water if required and toss the spaghetti in the sauce.

here's the recipe for one of my fav-
MERRY MACARONI
Ingredients
2 teacups boiled shell macaroni
4 tomatoes
1 onion, chopped
1/2 teaspoon finely chopped green chillies
1 carrot, chopped and steamed
1/2 teacup steamed green peas
1 capsicum, chopped
1/4 teaspoon chilli powder
4 tablespoons tomato ketchup
4 teaspoons butter
salt to taste
For the topping
4 tablespoons grated cooking cheese
Method
1. Put the tomatoes in hot water for about 10 minutes. Remove the skin and grate them.
2. Heat the butter and fry the onion and green chili for 1 minute.
3. Add the carrot, green peas and capsicum and cook for 2 minutes.
4. Add the tomato puree, chilli powder and tomato ketchup and cook for 2 minutes.
5. Add the boiled macaroni and salt.
6. Sprinkle the cheese and bake in a hot oven at 200 degree C ( 400 degree F) for 10 to 12 minutes.

Ribeye steak prepared medium rare.
I do love vegetables too, tho.
