Mexican Food

I am a lover of mexican food.My family and I have eaten food at different mexican restuarants.I love going out to dinner,but would love to try to fix some of the mexican dishes in my home,I am hoping that someone has some recipes that they would like to share.I would great appreciate it.

lol,well there is such a thing as mexican pizza,but i grew up thinking that pizza was Italian.

Oh wow, I have so many authentic mexican recipes: Menudo, Pozole, enchiladas, gorditas, homemade corn tortillas, salsa verde, salsa rojo, Albondigas..you name it..Tell me what you want and i'll give you the authentic mexican version.

Mexican Empanadas - Mexican Empanadas
My family love Empanadas, though I don't make them strictly to a recipe and they're not completely traditional. I caramelise some onions, add in cumin, pepper and salt, garlic and chicken (either minced or shredded). After cooking for a few minues I add in a tin of corn kernels. I let it cool. I use puff pastry prerolled leaves and cut out into circles - I half fill withthe cooled mixture, add a green stuffed olive into each, and then fold and seal the edges. Brush with milk and put in the oven until golden and puffed. As I said, not strictly traditional - and hti sis lower in fat than the fried version. Oh I also put a piece or two of red or green chillies in half - those I place a pastry dot so we know which are the hot ones!
