How to make Masala Pomfret?

Ingredients
1. ½ kg pomfret, cleaned and gashed for stuffing
For the marinade
1. 9 red chillies
2. 1/8 tsp pepper powder
3. 1/8 tsp cumin seeds
4. 1/8 tsp fenugreek seeds
5. 1/8 tsp mustard seeds
6. ¼ tsp turmeric powder
7. 4 garlic cloves
8. ½” ginger
9. 5 button onions
10. Salt to taste
11. 1 dsp lime juice
For the stuffing
1. 2 dsp refined vegetable oil
2. 1 cup onion, sliced
3. ¼ cup green chillies, chopped
4. ½ tsp ginger, chopped
5. 2 dsp tomato, chopped
6. Salt to taste
7. 1/8 tsp sugar
8. White of one egg
9. Refined vegetable oil for frying
Method
1. Grind the ingredients for the marinade.
2. Rub 2 dsp marinade evenly all over the fish and keep covered in a cool place for 2-3 hours.
3. Heat oil in a pan and fry onions, green chillies and ginger: fry till the onions are light brown on colour. Add tomatoes and saute until dry.
4. Add salt and sugar and mix well. Stuff the fish with this mixture. Seal the opening with beaten egg-white.
5. Heat oil in a skillet and fry the fish on both sides over low heat. Serve hot.
