Hi, My mother gave me this recipe recently. I tried it and it tastes good.
THAI RED CURRY:
Babycorn – 6 to 7
Green bell peppers – ½ cup long sliced
Carrot – ½ cup long sliced
Coconut Milk – 2 cups
Red chillies (dry) – 10 to 12
Soy sauce – 1 tbsp
Black pepper (whole) – 5 to 6
Corriander stalk -1/4 bunch
Cornflour – 1 tsp
Mushroom – ½ cup
Egg plant - 1
Green beans – ¼ cup
Ginger Garlic paste – 1 tbsp
Onions – 2
Ground coriander powder – 1 tsp
Ground cumin – ½ tsp
Oil – 4-5 tbsps
Salt to taste
Cut all the veggies into long slices. Soak red chillies in luke warm water for 20 mins. Grind these chillies into a paste along with black pepper, ½ portion of onions and coriander stalks. Boil beans and carrots and keep aside.Heat oil in a large pan. Add onions and sauté for 2 mins. Then add Ginger garlic paste and then all the other veggies. Mix well and fry for 8-10 mins till all the veggies are done. Now add the ground paste and mix well. Add ground cumin and coriander powders, soy sauce and coconut milk (mixed with the cornflour) . Add salt and water as required to cook the veggies. Mix well and bring to a boil. Serve hot with Rice.
Hope you like it.
