You will have a hard job to ruin fish. As long as you keep it moist and do not burn it, it will taste delicious.
The easiest way to begin is to buy some fish from a fishmonger, and ask their advice. Also VERY IMPORTANT. Make sure the fish is "gutted" and cleaned! The very first time I cooked fish, mackerel, I did not know about this and believe me, the smell is not helpful to digestion. Also, if you gut them over the sink you will not get this smell out for WEEKS!
If you do not get instructions from the fishmonger, I find the easiest way to cook fish is to bring to the boil enough water to cover the fish and then simmer for about 20 minutes or so, depending on the size of the fish. You can check on the progress by prodding with a fork, to see how soft the flesh is.
Once it is cooked you just strain and place on the plate. I find a heated tin of tomatoes poured over the fish is absolutely divine.
Fish can take on the flavours of many herbs and spices, so once you can cook your fish you can spend many hours happily experimenting. Have fun!

Pan Fried Fish Fillets
1 1/3 cups all-purpose flour
1 1/2 tsp salt
1/2 tsp freshly ground black pepper
2 large eggs
1 cup cornmeal
6 skinless fish fillets (about 3/4-inch thick)
Oil, for frying
Lemon wedges, for garnish
1. Preheat the oven to 250ºF. Place a baking tray in the oven to warm it.
2. In a shallow dish, mix together the flour, salt, and pepper. In another shallow dish, beat the eggs until they are frothy. Place the cornmeal in a third shallow dish. Dip the fish fillets first into the flour mixture, coating them lightly on all sides. Then dip the fillets into the eggs, shaking off any excess. Finally, dip the fillets into the cornmeal.
3. In a large skillet over medium-high heat, heat 1/4-inch of oil. When the oil is hot but not smoking (it should register 375ºF on a deep-fat thermometer), add as many of the fish fillets as comfortably fit in the pan (usually 2). Cook the fish for about 1-2 minutes per side, or until it is golden and just done. Transfer fish to the baking tray in the oven and continue frying the rest of the fish as directed.
4. Serve the fish immediately, garnished with the lemon wedges.
Serves 6.
This basic recipe works with firm, white fleshed fish fillets.
Enjoy!
