Please settle this dispute about baking

I got this recipe for a cake or cookies you can make but it has mayonaise in it. My boyfriend says that you aren't supposed to cook with it because it goes bad when it is warm/hot. He doesn't like mayo anyways. So does anyone know if its ok to bake with it.

Yes it is completely okay to cook with. When its cooked into something its fine. When it is bad is when you let it get warm...then don't refrigerate it. It can make you sick.
As for cooking with mayonaise its a definate go. And did you know when you don't have eggs for certain recipes you can actually substitute mayonaise and the item will still turn out allright? It doesn't work with just anything. But baking it works well because it is made with eggs and oil. I'm not sure of exact measurements, I've always just kind of used my best judgement and things usually turn out fine. Just have to play with it.
So go make that recipe!!!

This is interesting, I've never heard about cooking with mayonaise either...anything is possible though. If I were making a judgement on this, I would be having the same judgement as your boyfriend. My mother was always scared about sending eggsalad sandwiches on my lunch (because of the mayonaise) without an icepack, apparently it goes bad really fast.
After writing this, I did some research and found some surprising answers. Apparently using commerical mayonnaise is safe because it is filled with acid and preservatives which keep it safe. On the other hand, using homemade mayonnaise is not considered so safe and it is advised that the foods prepared with homemade mayo should be eaten or refridgerated right away.

Thanks for the link. I will have to show it to him. If anyone wants the recipe, its in my profile as I posted a discussion on it awhile ago. I made the cookies tonight and they really aren't that bad.

No it doesn't go bad. The eggs in the mayonaiise are cooked during the baking process just as regular eggs would be if you used them.

Once mayonnaise which is egg and oil, is baked then it is fine and dandy since it becomes baked into the item. He would never know it was in the baked goods anyway since it is a source of the usual ingredients if you think about it.

It's perfectly fine to bake and cook with mayo. I've made that chocolate mayo cake many times and have added mayo to casserole recipes many times and no one has ever been sick from any of those recipes. I think it's probly the idea of mayo being in there that bothers your boyfriend being he doesn't care for it. Poor guy! He'll miss out on a lot of great food that doesn't even taste anything like mayo!

Over 40 years ago my aunt used to make ahocolate cake with mayonaise in it. It was so nice and moist and choclatiety. I also cover my turkey with mayo or the salad dressing. Makes it nice and brown. It helps keep the juices in. The salad dressing cold be substituted for the mayo. personally I don't care for real mayo. to me it tastes rencid.

Ask your boyfriend if he likes or has ever had a red velvet cake ??? they are baked using mayonaise as one of the ingreidents ...its one of the most delious cakes you will ever eat , very rich I don't reccomend eating 3-4 pieces at one sitting ... try it its wonderful and you never know there was mayonaise used to make this cake ... as for going bad no it wont after its baked just like eggs in cookies or cakes after thay are baked they don't spoil...

I know it sounds kinda icky, but it can be done. My mom makes what she calls a mayonnaise cake. It tastes nothing like mayo. Its a nice rich chocolate cake. It has a pretty good flavor, but I will warn it is quite rich and heavy. She has made them since I was very small.

Sounds to me like he's confused. You are not supossed to eat mayonaise after it has been sitting out long enough to get warm. This is because there are raw eggs in it. It is fine to cook it though, just as it is fine to eat cooked eggs.

Mayo has been used for ever as a substitute for eggs, maybe not forever but when i was a little kid learning to cook we would use mayo in chocolate cakes makes them moister

I think that I have seen a cake recipe with mayonaise in it. Yes, mayonaise goes bad when you leave it sitting out and it gets warm/hot, but them so does milk. But we still cook with milk, so why wouldn't mayo work the same way?

It won't go bad when cooked in a cake or cookies. The thing that makes it go bad is the raw eggs in the mayonnaise. So when it is baked it, it will not go bad. I used to make my own mayonnaise. But he cakes and cookies will be moister with it in there eve nif it is not eaten right away.

This sound's like my husband, he won't try anything with mayo in it. He say's it kill's Polish people (Don't ask, he is Polish, that's all I know) the funny thing is, my son refuses to eat it, even before he found out my husband won't eat it. It must be in the gene's. I am going to try you receipe for the cookie's and not tell either one. lol

OMG mayo cake is awesome, subsstitute the eggs in a recipe for mayo, feed it to the bf, he will rave and then tell him what you did, its the only way I ever make a cake

Yes, It's perfectly fine to bake with. I have used it in a cake I've baked and it was wonderful. My suggestion, make the cake WITH the mayo, just dont' say anything (yes, I know.. you will be misleading him...) and see if he can tell it's in there.. it's a GREAT cake when you add the mayo.. it's REALLY moist. and you can't tell it's in there.

Cooking with Mayonaise is perfectly safe.It's the raw egg yolks that make it spoil easy....but when you cook it....the egg yolks are no longer raw.Just make the cake when he's not there....he will never know it has mayo in it....unless you tell him.
