Bananas are pretty easy to bake with... you can use them in so many recipes -- but they need to be really ripe to get the best flavor. You can try banana bread, banana muffins, banana chocolate cake (this is excellent! really rich but great tasting), I recently made banana chip cookies and they were very good... and every once in a long while, I get a serious craving for a peanut butter and banana sandwich like my mom used to make for us when we were kids :)

You can use it in jello, in cereal, to make pudding, a banana split and bread.

My daughters favorite fruit is the banana. She is just two so getting her to actually eat is a chore at times. I can fix just about anything with bananas and she will just eat it up with no complaints and since they are healthy I have found tons of things to do with them. We make Banana smiley cakes (pancakes with bananas in them), banana strawberry smoothies, peanut butter and banana sandwich, banana nut bread and banana pudding! If you want any recipes, just let me know!
