Does anyone cook gluten free food? I have to cook all meals gluten free for my husband. What makes things worse, is that he needs low salicylates foods too. For those of you who don't know what this is:
Gluten is the protein in wheat, so all breads, cakes, biscuits, pasta & lots of tinned & packaged food has to be avoided. Takeaway food as well usually has gluten.
Salicylates are a naturally occurring chemical that appears in many fruits and vegetables. Some are high level salicylates such as tomatoes, cucumbers & capsicums. Fruits that are high are all citrus fruits, apricots & plums.
Nearly all herbs & spices are very high too. Plus of course, artificial chemicals and preservatives.
My husband can have high and medium levels of salicylates now, although he used to have to avoid the lot.
This combined with the gluten free, makes cooking very difficult. I bake all his bread, although it can be bought at a high price.
Most of our meals are very plain.
Does anyone want to exchange gluten free recipes?

My mom passed away a month ago. While she was in the hospital she worried about me because I wouldn't eat much. My sisters and I were talking about it, I told them it seemed everything I ate upset my stomach or gave me bad heartburn. My older sister told me I may have a gluten intolerance. She said her sister in law eats a gluten free diet because she went through the same thing with similar symptoms. I started cutting out wheat products and it has seemed to help, occasionally I eat something that bothers me, but for the most part it has helped. I have just recently ordered a gluten free cookbook from ebay, I'm still waiting for it to be delivered. Once I find a good recipe, I'll share it with you. Do either of you have any favorite foods, so I can look for those types of recipes in particular.
