I have a no egg chocolate cake recipe that is moist and delicious. Don't know if it is what you had in mind but here it is. I have no idea where I got the recipe. It is a very simple recipe too.
2 c. flour
1/2c. sugar (or more if you like it sweeter) I have substituted with Splenda, about 1/4 to 1/2 cup).
1 tsp. baking soda
3 tlbs. cocoa
1/2 tsp. salt
mix these dry ingreadients then make wells in the mix and add in each:
1 tsp. vanilla
1 tsp. vinager
6 tlbs. canola oil
1 c. water
Stir just until all of batter is wet and mixed well.
Grease and sugar a 9x8 cake pan. Pour batter in and bake in 350 degree oven for 25 minutes.
I have doubled this recipe for a larger cake and it works very well.
You can sprinkle powdered sugar ontop, leave plain or use your favorite frosting.
Once tried you will not want to buy a box cake mix again.

Creamed Cucumbers
3 Cucumbers, sliced very thinly
Put in a colander with 2 tsp. of salt for 1 hour
Take 3/4 cup of sour cream and 1/4 cup of vinegar and mix it together
Take the cucumbers out of the fridge and squeeze as much water as you can out of the cucumbers
Mix all ingredients together
Salt and pepper to taste
For best taste, refrigerate overnight
Yummiest when served with a dish that has a meat and potatoes (i.e., pork chops and mashed potatoes), but good not matter what (e.g., hamburgers, lunch meat sandwiches, etc.).

Brussels Sprouts with Chestnuts
12 ounces fresh chestnuts
1 pound trimmed Brussels sprouts
1 ounce butter
Preheat oven to 400F. With the point of a sharp knife make a small cut on the flat side of each chestnut. Bake the nuts in their skins for 20 minutes, then peel off the outer shall and the inner skin. They are easier to peel while hot. Cook the Brussels sprouts in boiling water for 8-10 minutes, until just tender. Drain. Over high heat, toss the chestnuts and Brussels sprouts with the butter, until the butter is melted. Serve immediately.
