A horse who's gas pedal is floored

purchased a lovely 5yr old, 17 hand thoroughbred in August. (never raced) He was at my trainers for 30 days (he normally trains QH's). My big boy was trained "Clinton Anderson" style. He has an issue however and that is ... his "go" button is stuck ON all the time. He is very soft(one rein stop). I can walk him on a loose rein with no problem but if I ask for a trot/canter he wants to gallop (i know it's in his blood). I saw a Clinton Anderson show on RFDTV and he suggested to an audience member to do thousands of turns, shut him down everytime he goes any faster than you want him to. He literally said "thousands" of turns. I was just wondering what method you all use to train for "speed control"????
Any advise would be appreciated!!!!!!
