This is one of my family's favourite summer chicken recipes.

Chinese Chicken Salad
Ingredients:
1/2 head of lettuce, shredded
1 medium carrot, grated
3 cups cooked chicken, cubed
3 cups bean noodles or packet Chow Mein noodles
1/2 Spanish onion, chopped finely or 3 spring onions
Dressing:
1/3 cup oil
1/4 cup white vinegar
2 teaspoons soy sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground ginger
1. Shake dressing ingredients together in a jar
2. Assemble salad ingredients. Pour over dressing, toss and serve.

Garlic chicken with oyster sauce
2 table spoon of minced garlic
1/2 kg of chicken chopped
3 tables spoon of cooking oil
1 cup of water
oyster sauce
sugar
heat the oil and then add the minced garlic togher with the chicken.
When the chicken is light brown add water and let it boil a little.
Add some oyster sauce and sugar depending on your taste.
bring to boil.

Heavenly Potatoes and Ham
Yields: 12 servings
"Red potatoes, ham, cheese and green onion accentuate a creamy mixture with a crumbly, heavenly topping. This rich, hearty dish is sure to please the whole family."
INGREDIENTS:
5 pounds red potatoes,
quartered
1 (16 ounce) container sour
cream
1/2 cup butter
1 (10.75 ounce) can
condensed cream of chicken
soup 2 cups shredded Cheddar
cheese
1/4 cup chopped green onion
2 cups cooked, chopped ham
salt and pepper to taste
1 1/2 cups Parmesan cheese
flavored bread crumbs
1/4 cup melted butter
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2. Place potatoes in a large pot of water, and bring to a boil. Boil until slightly tender, about 12 minutes. Drain, and transfer to a large bowl.
3. Mix sour cream, butter, cream of chicken soup, Cheddar cheese, green onions, ham, salt and pepper with the potatoes. Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.
4. Bake 30 minutes in the preheated oven.
