Other Religions and Evolution

A lot of Christians are opposed to the idea of evolution. I would like to hear the views of followers of other religions on the subject of evolution... How do you feel about it both personally, and as a member of your religion?

Strange that so many Christian people are anti-evolution, when the Book of Ecclesiastes is pretty clear on the subject. Even the Vatican doesn't have anything against evolution.
Anyway, I'm a Celt, which is a nature-based belief system, if not a "religion" in the modern sense, and obviously thus have no problem with it. Life does the work, people do the interpretation.
What I don't get is how so many monotheists can start with God creating everything, then just ignore the entirety of created things.
